Driving home yesterday we noticed that by 7:00am the parking lots visible from the highway were full. A Best Buy in Maryland was not just busy but completely full with vehicles circling around the edges trolling for parking. We couldn’t believe it. I guess it is the busiest shopping day of the year. Today, my Dad told me a woman in Florida was knocked down in a Wal-Mart by other shoppers and nearly crushed, read it here. Don’t people think about buying gifts the other three hundred or so days a year? Sure, there’s some last minute stuff to get or people you forgot but can’t they phone or order on the internet or even wait until Monday evening for the crowds to abate a little? Why anyone would subject themselves to that I can’t understand.

We saw remarkably little traffic and got an early start, so despite the poor weather we made great time on the road. At 6:10am we left the gas station in Fairfax and I dropped Maria off at her office at 10:23am. We made two brief stops on the highway, once for a drive-through breakfast and once for a rest stop and coffee. A few years ago after dodging traffic, winding down back roads and sailing down the Saw Mill Parkway without the least bit of drama and while keeping up as much of a conversation as one can with passengers in the back of an open convertible, Karen and Russell half-joked that I should be rally driving. Maybe they’re right. I didn’t check the odometer but I can tell time and we all but flew home.

Susan and Chris made a great meal. Really out did themselves and everything was perfect.

We’ve had two people ask for this recipe from Maria’s aunt Shirley. We serve it as dessert but if you have a sweet tooth it makes a nice side dish.
- 3 to 4 cups mashed cooked sweet potatoes
- 1/2 cup sugar
- 2 eggs, separated
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1 cup flaked coconut
- 1 cup mini-marshmallows
- 1 cup crushed pineapple, drained
- 1/2 stick butter, softened
Combine potatoes, sugar, egg yolks, vanilla, cinnamon and butter. Stir in coconut, marshmallows and pineapple. Beat egg whites until stiff and fold into mixture. Pour into a buttered 2 quart casserole. Make a streusel topping by combining
- 1 cup brown sugar
- 1/2 cup flour
- 1/3 cup butter, softened
and sprinkle it over the mixture. Bake at 325F for 35 minutes.
